What is Sansho?

Zanthoxylum piperitum, commonly known as Japanese pepper (sansho), is a spiny, aromatic shrub native to Japan and Korea and classified in the Rutaceae family. Its peppercorns are widely utilized as a culinary seasoning in Japan.

Asakura sansho?
Budo sansho?

Asakura sansho is believed to have originated in the Asakura district of Yoka Town, Yabu City, Hyogo Prefecture, and is known for its particularly strong aroma and rich flavor. It is characterized by its refreshing, refined citrus aroma and a mild, gentle tingling sensation. It is rich in essential oils, particularly the aromatic compound limonene, and retains its fragrance even when heated, making it a versatile ingredient used in a wide range of dishes, such as tsukudani and as a seasoning.

Budo sansho has large, pale green berries and is characterized by its strong numbing sensation and aroma. It is 1-2 mm bigger than Asakura sansho.
